Mix the dry dough ingredients together. Then add the water gradually adjusting the quantity up or down so that you get a sticky dough
Cover the dough and let double in bulk
Once doubled in bulk, deflate and divide into your desired portions – large buns for adults, smaller buns for those with smaller appetites – and form into balls
Place the buns on silicon baking sheets to rise (about 15 to 30 minutes) covered with a clean tea towel
Bring the water bath to a boil
Preheat oven to 400F – with the rack lower in the oven to reduce over browning.
Boil the buns in the water bath – about 30 seconds on each side give or take. When removed replace on the silicon baking sheet. Sprinkle salt on the top of the buns.
Cut an X with scissors on the tops of the buns if you want that characteristic look.
