The night before make up the Levain in a non metallic bowl – I like using a glass pyrex bowl that has a cover. Mix the sourdough starter with the whole wheat flour and milk. Cover and head to bed.
Preheat Waffle Iron
In the morning mix up the waffle batter. Then add the Levain gently stirring to fully incorporate the two.
Bake in your waffle iron, keep warm in the oven or fire them off to the hungry breakfast crowd as fast as they are cooked.
