Whole Wheat Bagels Made Simple

  1. Add liquid ingredients (Water, eggs, vinegar, oil) and mix in bread machine pan
  2. Add whole wheat flour
  3. Distribute evenly over the surface of the flour the salt, sugar and yeast
  4. Return the pan to the machine
  5. Set the machine on the dough cycle. As the dough is first mixed add the necessary additional water so that you get a sticky moist dough. Then close the machine.
  6. When the machine has complete the dough cycle if it only has one kneed reset the machine for another dough cycle and allow it to kneed the dough once more. Then turn off the machine, remove the pan and dump out the dough on a floured work surface.
  7. Divide the dough into between 12 and 18 pieces – depending upon how large you want the bagels to be.
  8. If you want round bagels form each dough piece into a ball and then open a hole in the center to make the characteristic O. If you don’t care about rounds and are ok with triangles and squares just form a hole in the center of the dough pieces you’ve sliced off.
  9. Place the bagels on a baking sheet – preferably on a silicon mat. Cover with a tea towel and let rise until doubled.
  10. Preheat the oven to 400F
  11. Heat up a pot of water until boiling and add a pinch of salt. When the bagels have finished their rise gently place them in the boiling water. Boil for about one minute on one side and then flip them over and boil on the other side for another minute. Remove, drain and replace on the baking sheet
  12. When all of the bagels have been boiled you have the option of brushing the tops with a beaten egg and if you want to add toppings such as poppy seeds sprinkle those on.
  13. Bake at 400F for 20 to 30 minutes. If you are using a silicon baking mat baking time will tend towards the longer rather than shorter time.
  14. Remove from the oven and cool – get your cream cheese and smoked salmon ready
